Fried or roasted, this mouth watering corn ribs recipe will leave a mark on your taste buds!. Fresh sweet corn fried in vegetable oil over high heat, moderately spiced with smokey suya pepper, paprika and garnished with fresh spring onions, parsley, parmesan and greek feta cheese for an extra layer of flavour in every bite.


This recipe is perfect as a side dish as well as on its own for a snack. Pair this with our baked tilapia recipe for an amazing soul filled lunch!.


How to make fried corn ribs




Ingredients

  • 2x Corn, husks and silk removed.

  • 1 tablespoon chopped fresh spring onions

  • 1 tablespoon chopped fresh parsley

  • 2 teaspoon paprika

  • 1 teaspoon suya pepper

  • 1 teaspoon salt to taste

  • Greek feta

  • Parmesan

  • Vegetable oil for frying


Directions

  1. Wash corn with clean water and use a sharp knife to cut each corn vertically into four pieces.

  2. In a frying pan over medium heat, add vegetable oil and fry corn until the corn is golden brown and crispy, about 10 minutes. *If roasting, drizzle oil over the corn and roast in the oven at 180 degrees C for 25 mins till golden brown.

  3. Remove the fried corn from the heat and put in a mixing bowl. Add paprika, salt, suya pepper and spring onions.

  4. Garnish with fresh parsley, spring onions and generous amounts of parmesan and Greek feta cheese.
